You can set a rule requiring a deposit on the expensive slots. The bride sees the amount and your own payment message while booking, and you mark it in the system yourself once the money is in.

You set the duration so travel and setup are part of the slot, and the shift plan shows the days you are out. The rest of the calendar stays open, so new clients can book in the evening.
